There are only a few lights glimmering deep in the darkness surrounding the arrival of distilling spirits in Europe that give a clue as to how it all started. One belongs to the ninth-century medical school of Salerno in Italy, which was founded by Benedictine monks. They were the first to translate the works of Greek and Arab scholars into Latin and were distilling alcohol at some point between 1050 and 1150.
